Fruitman Kitchen Basics: Focaccia

Focaccia is the best bread. Proof: It is the bread used in David Bowie’s later-years favorite sandwich, link below.

Read before committing: We filled our focaccia with pastas for the lulz, but it’s OK to serve on its own, we promise.

Ingredients
1/2 cup good olive oil
1 tablespoon chopped rosemary
1/2 tablespoons calabrian chili flakes (optional)
2 minced garlic cloves
1/2 teaspoon black pepper
2 teaspoons dry yeast
1/2 teaspoon honey
2 1/2 cups flour
Flaky salt

Instructions
Over low heat, cook olive oil, garlic, rosemary, chilis, and black pepper until aromatic, about 7 minutes
In a bowl, combine 1 cup water with the yeast and the honey, stir and wait 5 minutes
Add 1 cup flour and 1/2 of the infused olive oil mixture, stir a little bit
Stir in the remaining flour and salt until smooth. Knead until uniform and supple.
Place mixture in a bowl, cover with a damp towel, and let rise for an hour.

Preheat oven to 450F.
Spread dough on a baking sheet and crimp it with your fingures. Drizzle the remaining oil on top and spread.
Bake until golden brown, about 20 minutes.

Use it to make one of David Bowie’s favorite sandwiches.
