Charlotte Salad

The Charlotte Salad is a delicate blend of acid, umami, and herbal power. It’s the kind of salad that could probably survive if it missed one or two of its ingredients, but any more than that and it’s futile. A true reine of the salad world, it is hard to imagine a better one. Leave it to the French to obsess over fish in a salad, something less than appealing written out but truly wonderful when tasted. Best enjoyed on a sunny day for lunch.

Ingredients:
2 handfuls of fresh arugula
2 scallions, greens cut in tiny rounds
1 small handful of Fruitman Kitchen Radishes. (regular ones ok too)
10 small cherry tomatoes
1/2 of an avocado
1/2 can of herring filets in oil, around 50g
1/2 lemon, juiced
1 generous splash of olive oil
1 generous splash of sesame seeds
1 pinch of salt

Instructions
Place everything in a large bowl.
Stir everything until the ingredients are evenly distributed.
Cover bowl with a hard object like a cutting board or another bowl.
Shake vigorously. This step is important for emulsifying the acids and oils in this salad.
The end result is pure heaven, go ahead and eat a big forkful, this is now your secret too.
