This is the home of the Fruitman Kitchen’s favorite breakfast protein: herring. Here in the Fruitman Kitchen, we are not quiche eaters, we do not eat egg. There is an entire world of egg-free breakfasts waiting on the horizon, these are some of them.
Most of these recipes are simple and can be thrown together in under 15 minutes.

Herring Toasties
This is an easy, winning formula: buttered toast with canned herring fillets and scallions sprinkled over the top. Arugula on top would be nice too.
1. Heat pan on medium and add a small amount of butter
2. Place two pieces of bread in pan, spread around to soak the butter, toast on both sides.
3. Remove from pan, spread herring, add greens. (scallions and arugula are best choices)

Japanese Herring Breakfast
A simple combination that is surprisingly filling and nutritious. While it is possible to make everything the morning of, we highly recommend using leftover rice and pre-pickled radishes. Ideally, the soup is the only component you cook.
1. Bring 1 1/2 cups of water to a low simmer (no boiling) and add 1 Tablespoon dashi powder, 1 splash of soy sauce, and 1 teaspoon of miso paste.
2. Add one bulb of bok choy and let simmer.
2. Reheat leftover rice OR make from scratch, top with your favorite rice seasoning.
3. Plate rice and add pickled radishes and herring filets.
4. Sprinkle scallions over everything and add a spicy oil to your soup if you like.
